Spoonful Eats – Pomegranate Cardamom Prosecco

Brunch is a meal focused as much on drinks as on food. A proper brunch place setting is incomplete without at least three beverages: water, coffee, and a cocktail or gussied up mocktail. While Bloody Marys and mimosas are celebratory by nature, they are such standards by now that they rarely herald much excitement.

That’s why we’re charmed by this seasonal sparkler – it adds a glamorous little pop to a brunch gathering, and would be just as appropriate for pre-dinner drinks. Prosecco (because, bubbles are always welcomed at brunch) are warmed with a touch of ground cardamom and bejeweled with a sprinkling of pomegranate seeds. A snap to assemble, this drink looks so pretty in a champagne flute, and is refreshing enough to stand up to the sweet and savory dishes comprising any brunch spread.

Pomegranate Cardamom Prosecco

Serves 4

  • 1 bottle Prosecco, chilled
  • 1 cup of pomegranate seeds
  • 1 teaspoon ground cardamom

Pour Prosecco into four glasses. In each glass add ¼ teaspoon of cardamom and lightly stir. Divide pomegranate seeds four ways and add to each glass. Serve chilled.
