In these gorgeous, generous papaya smoothie boats, the addition of nut butter and cacao powder yields a chocolatey smoothie all wrapped up in a fresh and detoxifying papaya. It will keep you guessing whether or not it is actually healthy because it just tastes that good. The combination of tropical fruit and rich cacao has never been more perfect.

Papaya Smoothie Boat

Serves 4

Total Cooking Time: 20 minutes
Active Cooking Time: 15 minutes

  • 2 small papayas
  • 2 frozen bananas, broken into pieces
  • 1 cup coconut milk
  • 4 teaspoons coconut nectar, agave nectar, or honey
  • 2 tablespoons açai powder (TIP: available at health food stores typically in the vitamins and supplements, or raw food sections)
  • Toppings:1 cup fresh pomegranate arils, 4 strawberries, halved, ½ cup blueberries, handful of mint leaves

Halve your papayas and seed them, forming a boat for serving. Then, scrape out a bit of flesh from each half until you have 1 cup.

Add cup of papaya flesh to the jar of a blender along with frozen banana, coconut milk, coconut nectar, and açai powder. Blend until silky and smooth.

To serve, pour some smoothie into each papaya boat. Top with strawberries, blueberries, pomegranate seeds, and mint leaves.
