Avocado Toast Pizza on Tray

We love when creative recipes can breathe new life into tired trends. Of course, avocado smashed on toast is still a top notch light meal or snack, but if we see another Instagram post about it, we might scream. This clever approach reimagines the healthy brunch stand by as an easy-to-share pizza, with fresh tomatoes, savory pesto, salty olives and slices of avocado in place of cheese. The combo is more than just delicious; it also provides a great balance of protein, carbohydrates, and healthy fats.

Avocado Toast Pizza

Serves 2-4

Total Cooking Time: 20 minutes

  • 1 ball prepared pizza dough, at room temperature
  • 3 tablespoons basil pesto
  • 1 cup multicolored cherry tomatoes, halved
  • 1 ripe avocado, sliced thinly
  • 4 cup pitted green olives, sliced into rings
  • Extra virgin olive oil
  • Salt & freshly ground black pepper

Heat oven to 450°F. Grease a pizza pan or a baking sheet lightly with olive oil.Place pizza dough on prepared pan and, using lightly oiled fingertips, press pizza dough into roughly a 10-12” circle. If the dough springs back or resists, allow to rest for 5 minutes and try again.

Spread pesto over dough in a thin, even layer, almost to the edges. Add ⅔ of tomatoes. Drizzle with a thin stream of extra virgin olive oil. Bake for 12-15 minutes or until crust edges are beginning to go golden brown.

Remove pizza from oven and top with avocado slices, remaining tomatoes, and green olives. Drizzle once more with extra virgin olive oil and season with a generous sprinkle each of salt and pepper.
