Spoonful Eats – Eggs in Rolls

Eggs in Rolls

Serves 4

Total Cooking Time: 45 minutes
Active Cooking Time: 25 minutes

  • 4 French bread rolls
  • 2 tablespoons unsalted butter, softened
  • ¾ cup fillings (such as tomato, cheese, cooked sausage, potatoes, onions, mushrooms, spinach, ham and spinach) (COOK’S NOTE: Add anything to these rolls you would put in an omelet. We suggest limiting yourself to three of your favorite ingredients.)
  • 4 eggs

Ready medium-hot coals and prepare fillings for rolls.

Slice rounded tops off rolls. Hollow out rolls leaving ¼-inch-thick wall, and brush inside with butter.

Place rolls on squares of doubled foil. Fill each with a few tablespoons of filling, then crack egg over each. Season eggs with salt and pepper, top with roll tops and wrap in foil.

Nestle in coals and leave until cooked through, 15 to 20 minutes.
