If you’re not quite ready to say goodbye to the flavors of the holidays, this cheerful sparkling cocktail is the perfect aperitif for a New Year’s Eve dinner or brunch. Woodsy rosemary infused simple syrup balances out the bright sweetness of orange juice and Prosecco’s dry fizz. A few frozen cranberries floating in the glass lend a festive “deck the halls” vibe and help keep the drink nice and cold for leisurely sipping.
Cranberry, Orange & Rosemary Spritzer

Total Cooking Time: 30 minutes (includes cooling time)
Active Cooking Time: 10 minutes
- ¼ cup (50 grams) water
- ¼ cup (50 grams) granulated sugar
- 2 rosemary sprigs
- 6 oranges, freshly squeezed
- 20 frozen cranberries
- 1 bottle of Prosecco
- 4 rosemary sprigs, for garnish
Combine the water and sugar in a saucepan. Bring to a boil, add the rosemary sprigs, and turn off the heat. Let the rosemary infuse the syrup for 10 minutes, then remove the rosemary. Cool the syrup to room temperature.
Fill your glasses one-quarter with fresh orange juice, add a splash of the rosemary simple syrup and a few frozen cranberries. Fill the glass with Prosecco and garnish with a rosemary sprig.
