Lemon Honey Sparkler Cocktail

Looking for something easy drinking for a relaxed weekend brunch? This lemon honey sparkling cocktail is just the ticket. Prep the glasses with the lemon zest and lemon honey mixture up to two hours ahead. When your guests arrive, stir and top with well-chilled Cava.

Lemon Honey Sparkler

Active Cooking Time: 12 minutes

  • 3 large lemons, at room temperature
  • 3 tablespoons honey, preferably local
  • 1 bottle (750 milliliters) Cava, well chilled

Using a paring knife or vegetable peeler, peel five 2-inch long strips of lemon rind. Twist the strips and squeeze the lemon oils into the champagne flutes. Drop 1 piece of rind into each flute.

Juice the lemons, straining to catch seeds, to yield ½ cup of lemon juice. Place the lemon juice and honey in a small bowl and whisk to combine. If the honey isn’t dissolving into the lemon juice, place the mixture in a microwave-safe bowl. Microwave on high until just slightly warm (just enough to melt the honey), 10 to 15 seconds. Let stand to cool at room temperature before proceeding.

To serve, whisk the lemon honey mixture again and divide it among the five glasses. Top each glass with chilled Cava.
