Grilled Salmon Skewers

It’s Grilling Week at Spoonful! To get you geared up for a long, awesome summer of cookouts and BBQs, we’ve got a bunch of great grilling recipes on deck to share. These grilled salmon skewers are at the top of our list for a perfect weeknight supper.

Seafood and the grill want to go together – the elements of water and fire combined create a certain kind of magic. And of all tasty creatures that come from lakes, rivers, and the ocean, salmon is at the top of nearly everyone’s list (heck, even most toddlers love it). We’ve sung salmon’s praises before, and the fact that it’s currently grilling season is just one more reason to pay a visit to your fish monger to see if there’s any good looking sockeye that won’t break the bank.

If and when you can find a really nice piece of salmon, it doesn’t need much: simple seasonings, a sprinkling of salt, and some slivers of citrus. Slice those lovely fillets into cubes, thread them up on bamboo skewers, throw them on the grill, and just a few minutes later, you’ve got an impressive and downright delicious entree.

Grilled Salmon Skewers

Serves 8

Total Cooking Time: 25 minutes
Active Cooking Time: 5-8 minutes

  • 4 tablespoons chopped fresh oregano
  • 4 teaspoons sesame seeds
  • 2 teaspoon ground cumin
  • 2 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper flakes
  • 3 pounds skinless salmon fillet, cut into 1-inch pieces
  • 4 lemons, very thinly sliced
  • 4 tablespoons olive oil
  • 32 bamboo skewers (soaked in water for 1 hour)

Mix oregano, sesame seeds, cumin, salt, red pepper flakes, and olive oil in a small bowl to combine; marinate the salmon pieces in the mixture and refrigerate up to one hour before grilling.

Prepare grill for medium heat. Beginning and ending with salmon, thread marinated salmon and folded lemon slices onto 16 pairs of parallel skewers to make 16 kebabs total. Grill, turning occasionally, until fish is opaque throughout, 5–8 minutes.
